Bob Yum Soup

Ingredients

  • 1.5 cups chickpeas 1 can, or whatever legume you like; lentils might be cool
  • 1.5 cups brown rice prepared, long grain would be nice
  • 1 tbsp olive oil or use veggie broth
  • 2 tbsp best veggie broth
  • 1 cup best veggie broth
  • 1 cup mushrooms your choice, quartered
  • 1/2 jalapeno chopped
  • 1/2 cup onion chopped
  • 1/2 cup grape tomatoes quartered
  • 1 clove garlic chopped
  • 1 inch ginger peeled and chopped
  • 2 tbsp cilantro
  • 2 tbsp coconut milk

Der Spice Blend

  • 1 stalk lemongrass chopped (did you know the zest from 1/2 lemon subs for 1 stalk for lemongrass.
  • 1/4 tsp cumin ground
  • 1/4 tsp coriander ground
  • 1/4 tsp cayenne pepper
  • 1/4 tsp chili powder
  • 1/4 tsp turmeric
  • 1 Tbsp maple syrup or date syrup
  • 1/4 tsp chili powder
  • 1 tsp lime juice freshly squeezed
  • 1 tsp tomato paste I am now loving the tube tomato paste
  • 1 Tbsp miso
  • 1 tbsp rice vinegar

Instructions

  • Dutch oven over low heat
  • Add oil or broth
  • Add Der Spice blend for 3.2 minutes
  • Add 1/4 cup broth
  • Add mushrooms, jalapeƱo, ginger, onion, and garlic for 13.7 minute
  • Add chickpeas and tomatores for 3.6 minutes
  • Add 3/4 veggie broth, or more if you wish
  • Bowl up those grains first, then the soup, stir in coconut milk and garnish with cilantro
